
I had to substitute teach Miles' primary class a couple of weeks ago. The lesson was about being kind to animals. Shortly after, Miles told me he doesn't want to "eat anything that had a body." Although I am certain the primary lesson wasn't trying to turn the kids into vegetarians, I told him if he didn't eat meat he would have to eat a lot more vegetables and fruit. HE TOOK THE DEAL. The kid who gags on anything green ate a dinner of broccoli, black beans & rice, and applesauce. He was so excited about the food that he almost convinced Evan to eat broccoli. Miles was going on and on about how good it was so Evan took a piece from his plate and said, "Look at me daddy, I'm eating a tree!" Then he licked it a few times and said, "I don't like it." He really wanted to believe Miles had something to be excited about. Miles told me, "I'm trying to be more healthy these days." I think I have a 35-year-old trapped in my 5-year-old's body. But at least it will be a healthier body.
Do you have any good vegetarian recipes? This vegetarian phase may only last a week or two, so I need to get in as many vegetables as I can. Maybe if nothing else it will take away his fear of the green stuff.

What a cute little 35 year old! That's pretty awesome. You could try some vegetarian soups maybe. I have a really good Vegetable Cheese Chowder one. Plus I'm pretty sure it's cold up there, right?!
we do a lot of soups in our (almost) vegetarian household. plus i love to make whole wheat pizzas topped with pesto sauce, broccoli and cheese, or topped with bbq sauce with different peppers and cheese... ethan's favorite is a "fried rice" that i make with TONS of veggies, tofu, and half of the rice is actually shredded cauliflower. GO MILES!
